About Coffee Progress

I am Sofia Benedetti.

My path began in a small Italian village where my grandmother’s cafĂ© opened at sunrise and closed only after the last story was told. I learned to pull espresso on a vintage La Pavoni while standing on a wooden crate. My nonna taught me that coffee is about attention, not speed. When she passed, I inherited her leather journal full of roast notes, recipes, and observations about the people she served. That journal started my habit of writing everything down.

I studied literature, then fell in love with the science of taste. I took sensory analysis classes, completed SCA modules, and shadowed roasters to understand what changes in the cup when a single variable moves. I kept traveling, visiting cafés that treated coffee like a daily craft. Everywhere I went I filled spreadsheets and notebooks, looking for patterns that turn good cups into reliable ones.

Coffee Progress is the home for that mindset. I believe better coffee comes from small steps, measured changes, and honest notes. Here you will find guides that begin with first principles, then move to simple steps you can repeat. You will find gear evaluations focused on what you can taste. You will see side by side tests that show tradeoffs clearly. Most of all, you will get rituals that make your morning calmer and your cup more consistent.

How I work

  • Log ratio, grind, time, temperature, and water minerals in a simple sheet
  • Change one variable at a time and taste with a shared vocabulary
  • Use blind comparisons when possible and include more than one taster
  • Translate findings into clear takeaways you can apply at home

What you will find here

  • Brewing guides that help you dial in without guesswork
  • Plain language explanations of extraction and flavor
  • Reviews that connect performance to real kitchen results
  • Routines that fit busy mornings and still protect quality

I run a small monthly cupping club, teach a short “five minute dial in” class for new home baristas, and volunteer at senior centers to set up easy pour-over stations. Progress is not about perfection. It is about the next cup being a little better than the last.

If you have a question, ask. If you have a café story, share it. Coffee Progress is a place to learn with patience and purpose.
